The sitemap in Rank math plugin currently only detects the images which are added from the WP Media/Gallery.
Is it an option to switch from using the page builder to WP Gallery to add images?

Yes we do, our dev team is working on an API that will make it possible for third party plugins to tap into our content analysis tool to detect content across their page builders.
You can expect to see this sometime soon.
