Please check my new post URL posted in the sensitive data section. I have used the default schema “person” in this article. It won’t work unless I change the schema to “none”, publish the article and again change the schema to “Person”.

I have been able to reproduce this problem on my end. It only seems to affect the gutenberg editor and works as expected when editing using the classic editor.
I have passed this on to our dev team for closer investigation and we will be getting back to you in a short while.
