It has been confirmed that no caching mechanisms or plugins are currently active.
Following the creation of a new category, “test,” in three languages, it appears that only one language is reflected in the sitemap_index.xml URL.

As we have mentioned here, our sitemap includes only the default language. As long as the hreflang
tags are implemented correctly, that should suffice for Google to understand the relationship between the language versions.
If you wish to add the rest of the translated page, this may require you to manually add those URLs via our provided filter.

It doesn’t seem to make sense.. you said it only supports the default language, but I found url like “post-sitemap.xml” and “product-sitemap{#}.xml” that contain more than just the default language.
Could you please investigate this?
or Is it multi-language only support PRO version?

Also in multilingual sites, on sitemaps, we show the contents that are of the current selected language to avoid duplicated contents.
Nothing is missed by the search engine crawlers, as these links contains ( connects to ) the other missing link details for the other available languages eg when you click on link in the sitemap and view it’s source, you will notice something like

This behavior comes from the plugin Polylang for WooCommerce
and there’s a good reason to that, when it’s disabled some duplicates appear on the sitemap, see images below:
