As my colleague has already mentioned that you are not seeing data in your Analytics dashboard because there is not much data to be fetched and it is getting skipped while sampling by the API.
Please wait for a few days as once you get enough data in your GSC account, Rank Math will be able to fetch and show the stats in the Analytics dashboard.
