The process is carried out on screen but then nothing changes and the number of hits keep going up

Do you have another plugin that is creating another sitemap on your site or do you have a static file on the root of your site?
Please disable this plugin or delete this file and flush your permalinks to only have one sitemap file for your site. You can do this by heading over to Settings > Permalinks and hitting save.
The next step will be to resubmit this sitemap to the GSC so that it can take effect for your site.

the other links to deleted woo products aren’t being redirected. Is there a fix for that?

I have just tested these kinds of redirections and they work smoothly on my end. I have also tested on your site using site_domain/sitemap.xml and it redirects site_domain/sitemap_index.xml. Did you manage to fix this issue?

if it works on your end then I will trust your judgment as being good enough. I’ve tested again and it seems fine so far. If there are any troubles while I redirect all the other broken links I will contact you.
