If it is happening even after removing Rank Math, then it is not caused by Rank Math. As you mentioned, you have removed all traces of Rank Math but it is still happening.
Moreover, 5XX errors are server related so you might have to get in touch with your web hosting provider and ask them to look into it.

if I switch off rankmath the error is gone.

Can you please contact your hosting team and ask them if they’ve disabled the debugging on your site? Even after enabling WP_DEBUG, I don’t see any errors being logged in the debug.log file and the error_log file in public_html folder is not accessible to the username you shared in the Sensitive Data Section.
