For GTIN, I would recommend that you install the following plugin to help in entering this data: https://wordpress.org/plugins/product-gtin-ean-upc-isbn-for-woocommerce/
Reviews on the other hand will be automatically populated when you product receives some reviews.

Could you please check whether there could be sitemap_index.xml file in the root of your site directory and it exists delete it?
I cannot also spot any GTIN errors on the structured data testing tool.

What have you found? Why is GTIN Missing? And its weird because it does not show error for GTIN even though it is missing.
Is this going to remain unresolved?

Thanks for the continued patience.
I have been investigating the sitemap issues and I believe that it is related to some white spaces on your theme files. Unfortunately I have not been able to edit any of your files with the WP file Manager plugin that you recommended earlier or the theme editor, it returns a write error.
If possible please share some FTP details instead so that I can also test some custom code to add the GTIN details from your custom field that is assigned to your products.
