I do not have a Pro license, I require Pro for basic data like impressions etc?

You should be able to see these Google Search Console data even in the free version of the Rank Math plugin.
In case you’re still not able to see the data, please try following the steps mentioned in this guide and see if that works for you: https://rankmath.com/kb/delete-old-analytics-data/

The account I have had another website with a pro subscription, but I got rid of that website. I just removed it form my Rankmath account and add this current website, but for some reason it is saying I added it in 2023

You have an old Rank Math PRO subscription which have already ended for a very long time.
Since the PRO plugin has already been removed from your website, try reconnecting your Rank Math account again by following this guide.
Also, reconnect your Google account. Remove RankMath’s app from your Google apps permissions: https://myaccount.google.com/permissions
Then, head over to your WordPress Dashboard > Rank Math > General Settings > Analytics and reconnect the Google service and this time, ensure that all permissions are checked:
