It seems that you’re currently using the Rank Math PRO plugin, but the account you have used to open this ticket is the Rank Math free version.

Back to your issue, seems like your page-sitemap is working well. I’ve attached a screenshot in the sensitive data section for your reference.
But your HTML sitemap is returning HTTP ERROR 500. Can you please try checking the PHP values of your site? You can check that by going to WordPress dashboard > Tools > Site Health > Info tab > Server
If the values are low, please contact your web host and ask them to set the following values:
PHP Memory Limit: 512M
Max input time: 150
PHP time limit: 120
PHP max input variables: 1000

Appears the Business sub had expired. I have renewed now.
I think the issue was being caused by too many products trying to load.
A second issue I wonder if you could help with.
On the HTML Sitemap, I have marked Product Categories to be shown. However it is only showing the Top Level categories and no sub categories – which is what I we really need.
Is there anyway to get the sub categories to display on the HTML sitemap?

Sorry to disappoint you. There is no any way to get subcategories to display on the HTML sitemap at present. We have added this to our feature suggestion and let’s hope that this will be included in future updates.
As for the sitemap issue, please apply the recommended PHP values as instructed by my colleague here.
You may also head over to your WordPress Dashboard > Rank Math > Sitemap Settings > General and lower the “Links per Sitemap” option to at least 100.
