Same thing for me , just finished setting up rank math and in the search console overview I see my other project.

Thank you for getting in touch and I am extremely sorry about the trouble this might have caused.
Do you have both sites under the same account? There seems to be an issue from Google’s end for Sites under the same account, as a workaround you can verify your site under a separate Google account.
If you do not wish to do that, please install Site Kit for now until Google fixes the issue with their API.
