Many people have same problem. I already opend ticket some hours ago but no solution yet.

I did rollback to WP 5.5.3 with plugin “WP Downgrade” until a solution is found…
I tried to roll back my WordPress but WP Downgrade isn’t working for me.
The plugin reports that it has downgraded but WordPress insists its still running WP 5.6 and the RankMath problems aren’t solved. Cute, eh?
For me it worked. In WP Downgrade i entered 5.5.3 and save. It shows green as target version but is NOT installed at this time. After this at the end is a button “Downgrade Core”. You get to WordPress Update page and there you have to use “Reinstall Button”.
Seems that you used a different path. There is NO “Downgrade Core” button. I shall look again…. thanks 😉

Url path (after you domain): /wp-admin/options-general.php?page=wp_downgrade
English Version is I think slightly different, but the edit field for the down graded version is consistent as are the other two buttons.

I’m also having some issues with RM Pro after WP upgraded from 5.3 to 5.6 yesterday.
For every post (old and new), I have to hit F5 just for RM to show most of RM’s functionalities.
Rolling-back WP to previous version is not a good option for me as things might get worst…unknowingly.
RM Pro was working fine before WP 5.6…I hope RM can come up with something fast coz this is causing us big headaches already.
A wild guess is the new jQuery of WP…

After you update, please perform a hard refresh of the cache with your website open in your browser tab/window:
Windows: Ctrl + F5
Mac/Apple: Apple + R or command + R
