I have the exact same problem. My product description and short description appears empty, but when i highlight the edit space the description is actually still there. The Rank Math SEO section cannot be edited also and I cannot ‘edit with elementor’.
I have also deactivated all plugins and switched themes. Only once I have disabled Rank Math SEO, everything is back to normal

Please update to the latest version of Rank math: https://rankmath.com/changelog/ then clear you cache. This should fix the issue, if it doesn’t, do let us know.
