Please navigate to WP Dashboard > Rank Math > Titles & Meta > Product Categories and enable the Remove Snippet data option.
Once done, clear the cache of your site and the issue should be resolved after that.

because I actually need rich content for category pages.

That option will remove the Product Schema and disable the option to add the Schema to your categories. However, the default Schemas will still be applied.
