Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Please let us know if you find the culprit.
Only the site admin would know and your users won’t be affected by this troubleshooting.

Yes, my plugins and themes are all running the latest versions except for Woocommerce which is on version 3.9.2
I have now managed to get the breadcrumbs to display correctly, although I am not sure what was causing the issue I can tell you how I managed to fixed it.
I setup a staging site and installed the “Disabled Emails” plugin (https://wordpress.org/plugins/disable-emails/). I then noticed that the issue was resolved. I disabled the “Disable Emails” plugin and the breadcrumbs are still working correctly. So I did the same thing on my live site. I installed and activated the “Disable Emails” plugin and then deleted it. That is the only thing I did to fix the issue.
After resolving the issue, on my staging site I installed the Query Montior plugin (https://wordpress.org/plugins/query-monitor/) I have noticed for some time now that when updating plugins (maybe installing too) that RankMath generates the following database errors. Perhaps this could have been the cause of the issue in the first place?
