For better SEO it is always recommended for websites to have external CSS rather than inline or internal. Internal CSS wouldn’t much affect your SEO performance as long as this doesn’t affect your speed which is a big NO for SEO.

I’ve checked your site, and it seems that the CSS codes are already removed (without the Optimize CSS Delivery option). Have you tried temporarily disabling Rank Math and see if that CSS will still be shown in your page’s source code? No worries, all your configurations will not be affected as they stored in your database.
However, upon checking WP-Rocket documentation, when you activate the Optimize CSS delivery checkbox, critical path CSS will be generated for your website in the background and added upon the next page load. After that, CSS will be loaded asynchronously (i.e. without render-blocking) on your site.
In their other documentation, they have mentioned that enabling that option can cause numerous issues when not done correctly. Make sure you read this article about it. In this case, please get in touch with WP-Rocket for further assistance with this option.
