Since the whole site is returning a 503 error, this is related to your hosting provider. Please ask them to check using the tool that I have shared and resolve this error.

As the sitemaps are properly fetched and the URLs are also detected, plus 0 errors are present in the coverage section, please clear your website and browser’s cache and give Google some time to crawl the website again and see if the valid pages increase.

Google Search Console doesn’t reveal any errors to any of your website’s specific URLs and checking your website on the frontend, it seems everything is working fine as well.
In addition to that, your hosting provider insists that there are no server errors on your sitemap pages so we can conclude that this is fixed as I tested it in your preferred HTTPS status checker and it doesn’t return any errors.
So technically speaking, we don’t see anything wrong with the website that could cause the drop of your sitemap coverage.
This issue of yours could be due to Google’s frequent algorithm updates. Algorithm updates tend to affect millions of websites and you as well might be affected by this.
You may give it a couple more weeks or months and see if the stats in your GSC coverage will go back to normal.
