There’s no way to add this automatically with this type of Schema as we only do that and extract the user reviews from WooCommerce products when you use the WooCommerce Product Schema type.
To get the star ratings on this type of Schema you need to update the data manually or possibly create a custom variable that could extract that data from the database if it’s available there and accessible via PHP.

Please note that Google does not guarantee getting displayed on rich previews even if your schema meets all the requirements or using SEO plugins.
It is ultimately Google’s decision if they want to include them with your website or not and when it thinks the Schema is relevant to the search term used. It depends on a lot of factors, authority, and backlinks being just the 2 of them.
