I tried replicating your issue here but I wasn’t able to. The post editor seems to be just working fine after I went around the fields and options. I also tried creating a draft post and done some random edits and I can’t see some issues happening.
It looks like the debugging mode is not yet activated as error logs are not shown in Rank Math > Status & Tools > System Status.
Could you please ensure to enable your WordPress debugging mode by following this guide: https://wordpress.org/support/article/debugging-in-wordpress/ or you can get in touch with your web host, they will help you locate the log file.
For us to further investigate your issue, it would be great if you can share a video screencast replicating the issue from your end. You may use this handy tool loom.com to record your screen.

Could you please create a staging website and replicate the issue there and share its logins so that we can perform the troubleshooting there and your live website doesn’t get affected by the troubleshooting?
