It looks like you had manually entered a canonical URL on the advanced tab of the Rank Math metabox on the affected category which was taking precedence over the global options.
Deleting the canonical URL allows Rank Math to generate the right canonical as shown below:
Please remove the manual canonical URLs from this field to fix this. Please note that the Rank Math preview will display the default URL.

Thanks for your reply, which I unfortunately do not fully understand. Maybe I changed something in the past as you say, however…
actually in the advanced tab the canonical is showing:
http://www.website.nl/product-categorie/koffiebonen/

This in NOT the cannonical I manually entered and is more importantly NOT what I want.
It is generated by Rankmath I think because I CANNOT manually delete it.
I can however change/OVERWRITE cannonical manually to http://www.website.nl/koffiebonen/ which is as you know my goal.
Is that the best option, to manually overwrite this and the other productcategories? For me it is a little effort, but I do not want to disturb anything for SEO purposes.
Or should something be changed in global Rankmath settings to achieve correct url?

Please note that even though the Rank Math metabox displays the canonical as http://www.website.nl/product-categorie/koffiebonen/ on the preview, the correct URL is displayed on the page source. Please refer to the screenshot I shared earlier.
No additional step is required if you don’t have a manual canonical entered. Please inspect any category by clicking on CTRL+U on Chrome and check the canonical tag.
