To unlink your Google Account from your Rank Math account, head over to https://rankmath.com/my-account/edit-account/
And from there you can change your email address.
If you’re referring to your Google Account linked in your website, then head over to Rank Math > General Settings > Analytics and click the Disconnect/Reconnect button

You can do that from https://myaccount.google.com/permissions
Remove Rank Math from the list of Signing in options and then you can no longer use Google account to login to RankMath.com
