If your sitemap appears outdated, you may need to flush the cache. Navigate to Rank Math SEO → Sitemap Settings, increase the value of Links Per Sitemap by one, and save your settings. Then, go to Settings → Permalinks and click Save Changes to apply the current settings.
5. Exclude the Sitemap From Caching
Make sure your sitemap is not being cached. You can refer to this article on ensuring that your sitemaps are excluded from caching.
6. Resubmit Your Sitemap
After completing these steps, try resubmitting your sitemap URL to Google Search Console again.

You should only use the prefix URL property in your Google Search Console.
Also, from your screenshots, you are submitting the URLs using the IndexNow API, which is for Bing and Yandex search engines only:

Your sitemaps are working fine. However, your robots.txt does not use our default and recommended rules for indexing:

Also, you should check your Google Search Console > Indexing > Pages section to determine any issues reported on your URLs that may have prevented your site from being indexed:
