Hmm, I looked into it further and the SEO analysis says that I don’t have all these things connected (blog, social accounts, etc.) even though I do in fact. Any advice? Not even sure where to begin in fixing this as all the info is already filled in…

You need to run the site wide SEO analysis after making any changes on your site to ensure that the plugin does not report cached SEO audit data.
I have clicked on the option to perform the site wide analysis on the SEO analysis page and the results are now updated.

I have updated the twitter:card image from a summary card large image to a summary image. You will need to tweet these links for the changes to take effect and for Twitter to update the cache.

I have just inspected the page source on the affected link and it looks like there is an additional twitter:card tag on the page that is serving an incorrect image as shown below:
From my investigation using the Health check and troubleshooting plugin, the extra tags are coming from Elementor, you may want to review the data you have entered through this page builder. The tags go away when Elementor is deactivated.

I think I was able to fix the Twitter issue, but now I’m running into a similar issue with Facebook again. If I copy/paste the link it will show up correctly as a large image and then the title underneath it, but if I click the share button on the bottom of a blog post, it shows up only as a half image and half text (see the screenshot I added into the sensitive data). Any advice on how to make it the large image instead?

Seems like you forgot to share the image on the sensitive data section.
I have tested the sharing option on a couple of posts on your blog page but I cannot reproduce the half images.

I have been able to reproduce the issue when sharing on a mobile/smaller screen device.
This issue is stemming from the aspect ratio difference on the image.
Facebook recommends a minimum image size of 600x315px image and a recommended size is 1200x630px.
The image that you are using on your OG tag is 1500x903px. I would suggest that you scale this down and check the difference.
