I logged into your website’s admin area and found that since you’ve not explicitly defined a social image, the featured image should be getting picked, but the featured image is in “.webp” format, and hence the default OpenGraph thumbnail is used.
Also, the featured image is of lower than recommended dimensions. https://i.rankmath.com/rcrfJF
Please ensure to set an image of the recommended dimensions (i.e, 1200px X 630px) and of the supported image types (jpeg, png, and gif).
Setting the image following the above points should fix the issue.
Regarding the error in Instant Indexing, since 500 errors are server errors, could you please get in touch with your host and seek their help in checking the kind of errors that are reported on the error log?
Also, could you confirm if you removed the plugin and followed the guide shared by my colleague to setup the instant indexing plugin?
If not, please follow it and see if that fixes the issue.
