5xx errors are usually caused due to server misconfiguration or other server issues.
A temporal issue on your server might have caused the error and when it corrected itself (possibly by your host provider) the plugin functioned correctly.
If the issue reoccurs, enable debugging mode on your WordPress installation and share the error logs with us.
Having the error log file will give a clear idea of why this might be happening.
