If you’re using the WooCommerce Product Schema as default, you may need to delete it and generate the Product Schema to show the properties you can fill.

Also, in the plugin settings, I cannot choose this generic Product schema as default for all products.

You may be seeing empty fields in the Woocommerce Product Schema. This is because this specific schema automatically retrieves the details from your Product page and uses them for the schema. You may refer more to this page: https://rankmath.com/kb/woocommerce-product-schema/
If you wish to use the Product schema as default you can make use of our PRO feature to create schema templates then you can disable the default schema under Rank Math > Titles & Meta > Products. https://i.rankmath.com/JB90jq.
