I don’t think there is a way to modify schema added by woocommerce, however you can get in touch with them to help you remove/disable their schema then use Rank math schema which has Service in schema types.

I disable all woocommerce schema and use only rankmath one. I don’t see the way to change it for products. See the picture – https://rcl.ink/W3G

We are sorry but those two are the only 2 options we offer for the WooCommerce product pages. Technically, a Service is a product as well you offer on WooCommerce and you can choose the Product Schema to sell services as well.
