We generate the Schemas based on your configurations and also provide options for removing them.
However, I checked the source of the homepage and the Schemas that you’re seeing are general ones that are common and recommended for the homepage. For example, the “SearchAction” Schema is the one that can get you sitelinks on the homepage: https://rankmath.com/kb/google-sitelinks/
With that said, you can easily remove the unwanted Schemas in Rank Math. The default ones can be removed with a snippet and the manually added ones can be removed with the options available.

Yes, this works on any kind of website.
However, with the Free version, you can only add one Schema on a page/post.
The option to add multiple Schemas is available in the PRO plan.

As mentioned before, multiple Schema markup can only be added in the PRO version of the plugin and since you are using the Free version you can only add one type.
The markup that gets added automatically from Rank Math can be controlled by editing the following filter: https://rankmath.com/kb/filters-hooks-api-developer/#extend-json-ld-data
