If the meta box is not showing, head over to Rank Math > Titles & Meta > Product: Categories and enable the add SEO Control option

If the issue persists, assuming you are using the latest version of all the plugins and the themes (please update if not yet), this can be caused by a conflicting plugin or theme with Rank Math.
