UPDATE
Deleting article and publishing again same url, all goes well.
But problem stands.
Some articles not in sitemap and categories are only 2 in file on sitemap instead of 12. Seems so strange. Button is on “index” and google see them. Only they don’t appear in sitemap. Tried to reset setting too and didn’t go.

From your description, it appears that your sitemap is heavily cached. To fix that, please follow the steps below:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. Apply the following filter code to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

Almost… now sitemap has been accepted. Success and no more “don’t fetch”.
I see all ok in search console… discovered…11 category links and 275 posts. That’s right.
But when open https://ricetteromane.it/category-sitemap.xml
I see only 2 categoriy links instead of 11. Only 262 in posts instead of 275.
P.s.: cache deleted and put your code in my file.

Ok. Found the problem. Fixed www in canonical, but then changed in without www and this affected sitemap. Now all is ok.
