The other Social options were removed as the y are no longer considered for the knowledge graph by Google & Bing. The options available in in the social meta settings are only Facebook and Twitter. Linked uses opengraph meta similar to facebook. As for pinterest, it should use the same opengraph meta, however if you need to verify your site you can find the pinterest verification field in Rank math > General Settings > Webmaster tools

I spent yesterday tracking down facebook profile urls, numeric user IDs and twitter urls for all the admins, today they are all blank! What have I done wrong?

Could you please share some more details on where you are missing this? You can upload your screenshots to https://imgur.com and share the URL. Please note you can add the Twitter and Facebook info in Rank math > Titles & Meta > Social Meta
You then use the Facebook debugger and Twitter Card validator to check if the social data is correctly added to your URLs.
