I checked for the REST routes if they are being blocked on your site and yes, I found the Rank Math REST routes are being blocked by Wordfence installed on your site. I’ve attached a screenshot in the sensitive data section for your reference.
In order to fix this issue, please head over to WordPress Dashboard > Wordfence > Tools > Live Traffic and try looking for the following REST routes:
/wp-json/rankmath/v1/updateMeta
/wp-json/rankmath/v1/updateSchemas
/wp-json/rankmath/v1/updateRedirection
Once you find them, expend the row by clicking on them and then click WHITELIST PARAM FROM FIREWALL to fix this issue.

Thanks for the quick response. I’ve whitelisted the three routes, so let’s wait and see if it works. In the meantime I still do get the same issue with the description disappearing in the snippet. Is this then only a cosmetic issue? As long as the description updates on Google it’s not a big issue for me

The preview is not displayed if the post type does not have editor access, however, the meta description will still be saved.
You can check the page source and look for the meta description tag and see if the meta description is updated.
