Please note that it takes time for Google to crawl the sitemap, I will suggest you wait for some time and let Google crawl the sitemap.
Also, make sure the sitemaps are excluded from caching otherwise Google will see the cached version.
Please exclude the sitemaps from caching by following this guide:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Then clear your website cache and remove the sitemap from the Search Console, add sitemap_index.xml again and wait for Google to recrawl the sitemap.

I already did that but nothing happened I also tried to flush the sitemap and also pinged google to recrawl

I’m sending the screenshot of my google search console find it on sensitive data section
Kindly note that the overall URL in the sitemap is 108 and not 113 as indicated in the google console. and the sitemap can’t seem to update from 113 to 108

That’s normal behaviour. It will take time for google to process the URLs. You should wait for few days to a week, and there might be a possibility that Google has crawled the pages you have already deleted, and thus those URLs are not included in the sitemap?
