It seems the theme 5Play you are using is creating this issue. I ran a conflict check through this guide: https://rankmath.com/kb/check-plugin-conflicts/
I have noticed that when all of your plugins are active with default WordPress Theme Twenty Twenty-One Rank Math generates the sitemap just fine.
