I have checked your /sitemap_index.xml page and I see two sitemaps for pages created by Rank Math, page-sitemap1.xml, and page-sitemap2.xml.
The first one has 200 URLs and the second one has 111, so you have 311 pages in your sitemap. Rank Math divides the sitemaps in smaller ones so Google crawls them faster.

So every 200 URL one page-sitemap.xml, the next would be page-sitemap3.xml,page-sitemap4.xml etc.

Yes, that is correct.
You can increase the links per sitemap limit at WordPress Dashboard > Rank Math > Sitemap Settings > Global.
