It looks like the permalink structure on your website is set to plain which is why the URL is not getting changed in Sitemap settings.
To change this, you need to set the permalink structure to Post name at WordPress settings > Permalinks
Please note that changing the permalinks on a live, indexed, and established site may result in a serious loss of traffic.

Please remove the trailing slash from the URL:
https://cemeterysearch.org/sitemap.xml
I checked on my end and it is redirected properly to the sitemap_index.xml.
