The issue with the sitemap is caused by the server resources being exhausted when the generation is happening.
The fatal error is caused by the memory on the server being exhausted so you would need to use a lower number in the sitemap links settings to be able to generate all the data.
For example, we tested a value of 200 links per sitemap and that works fine on the website, so you can start with that and play around with the number until you reach the limit of the website, or increase the memory allocation on the server.
