If you want to set up custom schemas for those custom post types then use this guide – https://rankmath.com/kb/schema-generator/. You can set it up as you want.
If you need to include you custom post types into the site map then do so from rank math \ site map settings.
We are assuming Galleries, Rooms, Attractions & Services are custom post types.

It depends on what you want to achieve. Let’s say you run an e-commerce website with WooCommerce installed. WooCommerce creates a CPT named Products.
Products need to have a schema with details like Rating, Reviews, Price, etc., to attract more audiences. For this instance, Rank Math offers a Product schema that can be used to add these details.
