Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
See if this updates the sitemap page.

After taking a quick look at the settings, it seems you have a wrong canonical for the affected posts which you have manually set in the post SEO setting. Please refer to my screenshots here:
I went ahead and remove those values so Rank Math can generate the correct Canonical and the posts are now showing on the sitemap:
