Do you have caching setup on your site? If so please exclude your sitemap from caching. You can also prevent the sitemap from being cached by Rank math by adding this filter to your active theme functions.php: https://rankmath.com/kb/filters-hooks-api-developer/#enable-disable-sitemap-cache. Once done please do the following:
1. Head over to WordPress Dashboard > Settings > Permalinks
Hit the save button once.
2. Go to WordPress Dashboard > Rank Math > Sitemap Settings
Hit the save button once.
That should fix the issue.
