There is no cache for xml files. Can you send me an screenshot of the index sitemap generating a new one for videojuegos, for example? This is the last thing I see https://gyazo.com/aac0f191e96139d7c1b178a486a93840
and, for example, I don’t see any content of today on any sitemap. The issue only occurs when the last sitemap reaches its maximum; if I save with another settings, it will update well until some sitemap reaches the maximum number. Until that, the sitemap works great, with no issues related to cache.
We used Yoast Sitemap Generator in the past and this was not happening, even with the same cache system: WP Rocket and Fastly as a CDN.

I think I’ve now understood the problem. We might need to take a closer look at the settings. Please edit the first post on this ticket and include your WP logins in the designated Sensitive Data section.

Now it is working because you changed the number of URLs per sitemap to 500. I’m sure that the next post will not be included because the first sitemap reached 501 URL (I don’t know why it always do number +1).
The problem is that it seems like the plugin cannot create another new sitemap when it reaches the maximum, so it stops working. Also, I think it’s a bad idea to put the new posts on the first number, because the old sitemaps will always be constantly changing its number. I think is better to start from older to newer posts and from sitemap1 to sitemapX, with the old ones on the sitemap1 and the newer ones on the last number, and then creating successive numbers.

I see 291 in the last sitemap there. Once you reach 500 on that one and the next sitemap doesn’t get created – please let us know so we can check.
As of now, I don’t see any issue with the sitemap.
And don’t worry about what appears first and what appears last. It doesn’t matter to Google so it shouldn’t matter to you.
