The latest posts should always show in the first sitemap created /sitemap1.xml
.
However, there is a range of reasons why a URL or your posts may not be included in your sitemap. Please check this link for more information:

this is exactly what I said, don’t reply with a standard reply. I have checked all this you are telling me that google is stupid and rank math is super. if the URL is marked as no index why is it being indexed by google? I just told you I have excluded the sitemap from caching plugin. Now, what else?
I am looking for some solution to this menace. also latest post is not in sitemap1.xml. I already attached the screenshot. if you dont bother to look at the pictures, whats the point of going to that extra mile and providing you the evidence. If you are not going to bother to look at it ?

Miguel, this seems to have done the trick. However, i dont want to keep doing this. Can I get a permanent solution for this please?

One common reason your sitemap is not being updated right away because it is heavily cached.
Please exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article: https://rankmath.com/kb/exclude-sitemaps-from-caching/
