It seems that your sitemap might be not updating due to some caching. Please follow the steps below:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

I’ve checked the image you have sent, and it seems that you’re using W3 Total Cache. In this case, you need to remove that line in Non-trailing section because it always caches your sitemap. Please move that line to the section that says Never cache the following pages

If the issue persists, please also provide your sitemap URL in the designated Sensitive Data section so we can further check.
