Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

I did go through those steps before contacting you but nothing has worked so far. For now I’ve had to disable the sitemap and install a differnt plugin to handle the sitmap. Not ideal.

If you are using a different XML sitemap generation plugin along with Rank Math then please make sure to disable the Rank Math sitemap module. Keeping two sitemap generation plugins enabled might cause plugin conflict.

It turned out the server had some caching software on it which was causing the issue.
