For tags to appear in the sitemap, you need to mark them as index.
1. Head over to Rank math > Titles & Meta > Tags and check the index checkbox.
2. Please head over to Posts > Tags and check the index checkbox.
3. Please head over to Rank Math > Sitemap Settings > Tags > Turn on Include in Sitemap and Include empty terms.

Thank you for following up.
If you’re unable to see the options to index your tag archives, it seems that your Rank Math is still set to Easy Mode.
Please head over to WordPress Dashboard > Rank Math > Dashboard and click the Advanced Mode at the upper right corner of the screen
Please also make sure that those posts with tags are set to index and the canonical URL was not modified manually for them to show in your sitemap.

I’ve checked the post you have provided, and it seems that it’s already indexed and included in the sitemap as well. Your robots.txt seems to be fine upon checking and it’s already showing on the Google search results page.

You can also record a video screencast using a tool like Loom showing the issue and edit the first post on this ticket in the designated Sensitive Data section.

If that’s the case then it would seem like after that recent update there’s a conflict with one of the plugins or the theme you are using.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet),
To determine that, please follow this troubleshooting guide:
https://rankmath.com/kb/check-plugin-conflicts/
Only the site admin would know and your users won’t be affected by this troubleshooting.
Let us know once you have find the culprit.
If the issue still persists, then we might need to take a look at your site settings.
