1. You may submit only the primary sitemap (https://yourdomain.com/sitemap_index.xml) and Google should be able to detect all sitemaps under it.
2. Can you please follow these steps and see if the other sitemap will be shown in the primary sitemap?
2.1. Flush the Sitemap cache by following this video screencast:

2.2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Thanks for getting back.
You will have to delete all previously submitted sitemaps from your GSC then flush the cache of your sitemap by following the steps mentioned by my colleague. Then resubmit only your main sitemap (sitemap_index.xml) to your GSC.

Can you please check what error is reported by clicking on the sitemap link in the search console?
If it is a Couldn’t fetch error, it is in most cases, simply due to a bug in the Google Search Console.

Please ensure that Google is not looking at a cached sitemap. You may go through this KB article if you haven’t excluded your sitemap yet: https://rankmath.com/kb/exclude-sitemaps-from-caching/
If the sitemap is already excluded from being cached, please give Google a couple of days to recrawl your sitemap and see if the error goes away.
