For initial troubleshooting, please follow the steps below:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

If the issue persists, we might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.
Please do take a complete backup of your website before sharing the information with us.

Depending on the type of server you have you need to add the following redirections on your server configuration file.
Apache: https://rankmath.com/kb/fix-sitemap-issues/#apache-error
Nginx: https://rankmath.com/kb/fix-sitemap-issues/#nginx-server-error

After further checking, you can safely ignore the sitemap.xml 404 error as your website robots.txt file has defined the sitemap_index.xml URL as your main sitemap, so search engines will crawl that sitemap. If you are still receiving a high number of 404s for sitemap.xml, you can create a 301 redirect from sitemap.xml to sitemap_index.xml.
