How can I resolve it ?

Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:
https://i.rankmath.com/pipRDp2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

This procedure doesn’t change anything, I still have exactly the same number of files in my xml sitemap which is 1663 out of 1915 products.
But in the Google index (Search Console) I have 1711 files into my xml product sitemap
Yesterday’s night I began to compare the whole xml sitemap file to product to understand which ones are not in. Not really finished just done nearly the half.
Already noting some missing files.
The next step will be to know when the missing files (and products) have been added, it could be a good information of what’s going on. Then opening each product file to see if there’s something wrong such as a checkbox set at no index.
After doing that what can I do ?Hello,
Could you please share the affected product sitemap URL so we can check as well? You can add it to the sensitive data section

Seems that https://rankmath.com/kb/url-not-in-sitemap/ , setting a custom canonical url is the good reason.
But here’s the catch. I’m splitting my formerly site ywc.trade in 3 or more new site : portable-parts.store, imprimante.store, electronic-parts.store. Most of the product are going to the 1st one, but I haven’t already changed the rules in .htaccess (ywc.trade) so that I don’t want Google to consider that my new sites are using duplicate content. It’s the reason why I’ve used canonical url’s.
Is there any solution for this kind of problem ?
If any, I’ll cancel all the canonical urlsMany thanks for your help.

Google only indexes the pages that have a self-referencing canonical URL. That’s why the URLs are not added to the sitemap when you add the canonical URL manually in the Advanced tab of the meta box. You will have to remove them to get your new sites indexed. You can make some changes to the title and description of the products to avoid duplicate content issue.
