Please follow these steps to fix the video sitemap issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server.
And Rank Math doesn’t create a separate image sitemap. It includes the images in your sub-sitemaps. I checked your sitemap and the images are being included in your sitemap.

Video sitemap is still showing sitemap URL itself

Upon inspecting the source code of your video sitemap, there is nothing wrong with the sitemap. And I can see the URL of the pages.
Let’s find out first what google has to say about this:
If you visit the below URL:
https://developers.google.com/search/docs/advanced/sitemaps/video-sitemaps
Google recommended this structure:
<url>
<loc>https://example.com/mypage</loc> <!-- URL of host page -->
<video> ... information about video 1 ... </video>
... as many additional <video> entries as you need ...
</url>
And if you closely see inside the source code of your video sitemap, you can see the structure matches with the one Google provided.

The Video sitemap is not meant to view for visitors or, for that matter, anyone except Search Engine Bots.
That’s the pretty standard behavior of a video sitemap. There is nothing to worry.
