I do not think that you should be worried about this. The correct last modified time has been set on the individual URL links.
Please add the following code to your theme’s functions.php file to disable caching:

add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

I don’t see any issue in the Sitemap. We are showing time in the UTC timezone and that’s how it should be.
As far as site views are concerned, there are many factors which decides this. I would suggest you to first check in the Search console if any errors are reported there.

I have checked your property on the search console and this change is causing some coverage issues. There are a couple of redirection issues on your latest posts. You can see this when you head over to coverage after logging in to the search console.
