Rank Math creates a new post/page sitemap when the limit per sitemap is reached.
If you have already increased the limit but the sitemap is not updating, please exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Once done, remove all the sitemaps from the Search Console and add only sitemap_index.xml, and wait for Google to crawl the sitemap.

I don’t think the problem is in the cache. The sitemap is also visible on different devices.

Yes, those sitemaps are normal but since you have increased the links per sitemap to eliminate the post-sitemap1, that sitemap shouldn’t appear.
I checked your sitemap and it seems to be working fine now. Please allow Google some time to recrawl it.
